Pan Roasted Swordfish with Sauteed Tomatoes

Blow your guests away with this impressive swordfish recipe. Cook on high heat to give this seafood a lovely, golden coating. The simply seasoned swordfish is paired with juicy basil marinated tomatoes for a visual contrast that is picture perfect.

Serves 2

Basil Marinated Tomatoes

Ingredients:

1 Large Tomato
1/4 Cup Fresh Basil Leaves, Stems Removed
2 Tbsp. Olive Oil
1 Tbsp. White Wine Vinegar
Pinch Garlic Powder
Pinch Salt
Pinch Pepper

Directions:

Cube tomatoes and place on a platter. Place basil over the tomato. Whisk the remaining ingredients and drizzle over the basil and tomatoes. Cover and refrigerate for 1 hour.

Swordfish

Ingredients:

2 Swordfish Fillets (about 4oz each)
1.5 Cup Basil Marinated Tomatoes
2 Tbsp. Olive Oil
2 Tsp. Fresh Parsley; Chopped
Salt and Pepper

Directions:

  1. Pre-heat your oven to 425°F.
  2. Season the Swordfish with salt and pepper.
  3. Heat an oven safe skillet on high and add olive oil until smoking hot.
  4. Place the fish in the skillet and cook for 3 minutes. Flip the fish and place the entire skillet in the oven for 7 minutes.
  5. In the meantime, place the Basil Marinated Tomatoes in another skillet and sauté on high heat for about two minutes or until tomatoes are warm.
  6. Remove the skillet from the oven (remember the handle is HOT). Plate the tomatoes, followed by the fish. Garnish with chopped parsley.
